Sopa de albondigas con albahaca
No se si se han dado cuenta pero me encantan las sopas y una de mis favoritas es la sopa de albóndigas con albahaca. Porque es muy sabrosa, económica, nutritiva y saludable, para toda la familia. Ideal para los días de invierno, es como el plato típico que nos hacían las abuelas, tiene sabor a hogar. Esta vez la preparé con carne molida de pollo.
Ingredientes:
- carne molida (puede ser de pollo, vacuno)
- huevo
- pan de molde que no sea fresco
- cebolla
- ajo
- papas
- zanahoria
- zapallo italiano, zuchini
- albahaca
- pimentón verde
- caldo de verdura o pollo
- comino
- oregano
- aji de color, paprika
Preparación:
Muchos ingredientes? pero esto se puede simplificar si tenemos verdura congelada, la que se usa para hacer ensalada rusa , en buen castellano verduras surtidas. Primero que nada remojamos el pan en abundante agua. Mientras tanto la carne molida la aliñamos con todos los condimentos, yo le pongo además un poco de cebolla picada en cubitos muy pequeños y ajo. Colamos en pan y lo desmenuzamos bien y lo incorporamos junto a la carne y al final el huevo batido, juntamos bien los ingredientes y dejamos reposar un rato.
Picamos cebolla, ajo, pimentón y las papas en cubos regulares. En una olla grande ponemos aceite a calentar y doramos la cebolla con el ajo y el pimentón, condimentamos esto nuevamente y agregamos la paprika o ají de color para que el caldo tenga color y sabor. Le ponemos nuestro caldo y las papas y cocinamos unos 10 minutos.
Con la carne hacemos pequeñas albóndigas, las incorporamos de a una en nuestra sopa, agregamos las verduras y cocinas por unos 10 minutos más. Picamos bien finita la albahaca le agregamos un poquito de ajo y lo incorporamos a la sopa unos minutos antes de servirla. Que les parece? espero que les haya gustado. Si les gusta el sabor del pesto le puede agregar queso rallado también que muy rica así.
